Fish Tortilla Baskets

Serves 6.
the baskets are commercially available, known as tortilla crowns, or tortilla bowls or you can make your own in the oven at 400 degrees for 5 seconds and drape them hot over an inverted bowl.
List of Ingredients
- 3 C salmon or tuna, (or your choice of fish)cook,bone, and skin
- 8 ounces cooked corn
- 8 ounces lightly cooked peas
- 1 C chopped celery
- 1 C peeled and chopped cucumber
- shredded lettuce, enough to fill each basket almost half full
- 6 hot tortilla baskets
- 1 C sour cream
- 1/2 C grated cheese
- 6 scallions, sliced
Instructions
- Lightly toss fish, corn, peas, celery, onion and cucumber. Put lettuce in the baskets and add the tossed ingredients. Either add the sour cream and cheese to each basket, or let each person add their own. Also good with salsa.
Final Comments
Cheeses that work well are Mexican Queso blanco, Queso fresco, Panela, or Cotija. Or use the old standbys, Cheddar, Monterey or pepper jack. I like Feta sometimes depending on the type of fish.
