    Halibut Hot Dogs

    List of Ingredients


    • 3 pounds halibut, boned
    • 1 large onion, cut in pieces
    • 1 large carrot, cut in pieces
    • 3 stalks celery, cut in pieces
    • 1/2 tsp dill weed
    • 1 tsp parsley
    • 2 slices bread, soaked and squeezed
    • 2 eggs, lightley beaten
    • 1/4 C white cornmeal
    • salt and pepper to taste


    Instructions


    1. Grind the fish, onion, carrot and celery. add rest of ingredients and mix thoroughly. Form into hot dogs and wrap in plastic wrap. Tie ends.
    2. In saucepan cover with boiling water, return to a boil. Remove lid and reduce heat. Simmer for 1 1/2-2 hours until liquid is reduced by half. Remove from heat and set aside to cool.
    3. Remove plastic and serve with tartar sauce or thousand island dressing.
