Halibut Hot Dogs

List of Ingredients
- 3 pounds halibut, boned
- 1 large onion, cut in pieces
- 1 large carrot, cut in pieces
- 3 stalks celery, cut in pieces
- 1/2 tsp dill weed
- 1 tsp parsley
- 2 slices bread, soaked and squeezed
- 2 eggs, lightley beaten
- 1/4 C white cornmeal
- salt and pepper to taste
Instructions
- Grind the fish, onion, carrot and celery. add rest of ingredients and mix thoroughly. Form into hot dogs and wrap in plastic wrap. Tie ends.
- In saucepan cover with boiling water, return to a boil. Remove lid and reduce heat. Simmer for 1 1/2-2 hours until liquid is reduced by half. Remove from heat and set aside to cool.
- Remove plastic and serve with tartar sauce or thousand island dressing.
