    Makes about 50 fritters


    List of Ingredients


    • 2 1/4 C flour
    • 1/2 tsp salt
    • 3/4 C butter, divided
    • 4 eggs, separated
    • 1 1/4 C beer
    • 3 C minced clams
    • 1 T minced parsley
    • 1 1/2 T finely chopped scallion
    • lemon wedges
    • parsley sprigs


    Instructions


    1. Combine dry ingredients. lightly beat egg yolks. Melt 6 tablespoons of butter.Let cool to just warm and add to the yolks, then add to the dry ingredients and mix in. Gradually add the beer and allow batter to seet for 1 hour. Finely chop the clams. Add clams, parsley and green onions.
    2. Stiffly beat egg whites and fold in. Heat remaining butter. When hot, drop in the batter by spoonfuls. Brown fritters lightly on both sides. Serve hot , garnised with lemon and parsley sprigs.
