Marinated Carp or Perch

Cut fish into serving size pieces. Season with salt and pepper. Transfer to a buttered pan. Dot the fish with butter. Bake at 375 degrees F. for 15 minutes or until it pulls away from the bone when tested. Baste with butter once during the cooking.
Transfer to a deep dish, cover and set aside.
Make a spicing vinegar or marinade of 1 C vinegar, 1 small sliced onion, 4 whole peppers, 2 garlic cloves, one half tsp allspice, a small piece ginger root(or 1/2 tsp ground ginger), 3 whole cloves and a piece of lemon rind. Boil together for 15 minutes. Pour this over the fish and cover. set aside to cool.
To serve, remove the fish from the liquid, drain and arrange each piece in an individual nest of lettuce. Serve mayonnaise or tartar sauce.
