    Serves 6


    List of Ingredients


    • 2 C sliced onion
    • 2 cloves garlic, minced
    • 1/4 C melted fat
    • 1 can (1 lb-12ounces)Roma tomatoes, undrained
    • 6 ounces tomato paste
    • 1 1/2 tsp oregano
    • 1 1/2 tsp salt
    • 1 tsp sugar
    • 1/4 tsp pepper
    • 1/4 C chopped parsley
    • 2 pounds smelt
    • 1 C shredded mozzarella
    • 1/4 C shredded parmesan


    Instructions


    1. Saute onion and garlic in fat. Add next 6 ingredients, mix well. Cook slowly 30 minutes til slightly thick, stirring often. Add parsley.
    2. spread in a shallow 2-3 quart, rectangular casserole dish. Arrange smelt in a row on top. Sprinkle with cheeses. Bake 400 degrees for 15-20 minutes.
