Smelt Italian style

List of Ingredients
- 2 C sliced onion
- 2 cloves garlic, minced
- 1/4 C melted fat
- 1 can (1 lb-12ounces)Roma tomatoes, undrained
- 6 ounces tomato paste
- 1 1/2 tsp oregano
- 1 1/2 tsp salt
- 1 tsp sugar
- 1/4 tsp pepper
- 1/4 C chopped parsley
- 2 pounds smelt
- 1 C shredded mozzarella
- 1/4 C shredded parmesan
Instructions
- Saute onion and garlic in fat. Add next 6 ingredients, mix well. Cook slowly 30 minutes til slightly thick, stirring often. Add parsley.
- spread in a shallow 2-3 quart, rectangular casserole dish. Arrange smelt in a row on top. Sprinkle with cheeses. Bake 400 degrees for 15-20 minutes.
