    Frosting, Coconut Seafoam

    Recipe Introduction

    Frosts top and sides of 1 8x8 inch square cake.

    List of Ingredients

    1 C brown sugar
    1/3 C boiling water
    1 egg white, stiffly beaten
    1/2 tsp vanilla
    3/4 C Bakers Southern style coconut

    Recipe

    Combine sugar and water. Place over low flame and stir constantly until sugar is dissolved and mixture boils. Continue cooking until a small amount to soft ball stage (240 degrees F.). Pour syrup in fine stream over egg whites, beating constantly. Add vanilla. Continue beating until stiff enough to spread on cake. Spread on cake and sprinkle thickly with coconut while still soft.
