    Recipe Introduction


    If you can't find the coconut called for in this recipe, Check your local health food store or co-op for dessicated coconut. (no sugar).

    List of Ingredients




    2 C sugar
    1 tsp light corn syrup
    2/3 C water
    2 egg whites, stiffly beaten
    1 C raisins, chopped
    3/4 C Southern style Bakers coconut, chopped
    1 T lemon juice

    Recipe



    Combine sugar, corn syrup and water. boil until a small amount of syrup forms a soft ball in cold water, or spins a long thread. (240 degrees F.) Pour syrup slowly over egg whites, beating constantly. Add raisins, coconut and lemon juice. Continue beating until thick enough to spread on cake. Makes enough to frost two, nine inch layer cakes.
