    frosts two, nine inch layer cakes.

    List of Ingredients




    3 T butter
    1 1/2 C confectioners sugar
    2 T lemon juice
    dash salt
    grated rind of 1/4 lemon or orange
    1 1/2 C Bakers Southern style coconut

    Recipe



    Cream butter until soft. Add sugar, alternately with lemon juice. Add salt. Beat until smooth and light and add grated rind. Spread on cake and sprinkle thickly with coconut.
