Recipe Introduction
Lord Baltimore is usually a yellow pound cake, using eight egg yolks and lemon extract.
List of Ingredients
1 1/2 C sugar
1/4 tsp cream of tartar
1/2 C water
2 egg whites, stiffly beaten
1/4 tsp orange juice
2 tsp lemon juice
12 candied cherries, cut in quarters
1/2 C macaroon crumbs
1/2 C blanched almonds, chopped
1/4 C pecans, chopped
Recipe
Dissolve cream of tartar and sugar in water and boil until syrup forms a soft ball in cold water. (238 degrees F.). Pour syrup over stiffly beaten egg whites, beating constantly. Add orange and lemon juice to fruit, macaroon crumbs and nuts. Combine the two mixtures. Cool and spread between layers of cake. Frost with Lady Baltimore frosting.
