    Fried plantain cubes

    List of Ingredients




    1 onion, finely chopped
    1 tsp finely minced ginger
    1 tsp salt
    1/4 tsp cayenne
    2 overripe, black plantains, peeled and cubed
    vegetable oil for frying

    Recipe



    Combine onion, ginger, salt and cayenne in a bowl. Add plantains and and mix until well coated. Heat 1/2 inch oil in skillet, quite hot and fry cubes until brown on all sides. Drain on paper towels and serve as a snack. Serves 4.

    I use a recipe very similar to this, but cut the plantains in half lengthwise and then across to end up with 8 pieces . reduce the amount of oil to 1-2 T , and reduce the heat to medium high, fry on both sides a few minutes or until they are lightly browned. Serve as a side dish with Pork or lamb. ( or anything else that appeals to you, experiment) Great with Latin American, Cuban or African dishes.
