    List of Ingredients




    1 wild goose
    1 large onion or 2 garlic cloves
    2-3 chili peppers
    fat
    1/2-1 C coarsely cut olives
    salt
    pepper

    Recipe



    Clean and cut up goose. Place in a large kettle and cover with water
    Add onion and chili peppers to the cooking water.
    Cook until tender(15-20 minutes per pound).
    When tender, pan fry in hot fat until browned. Season to taste.
    A good addition to the gravy is chopped olives.
