Rabbit (2 1/2 lbs.), cut in serving pieces
2 T olive oil
1 clove garlic, minced
1 onion, chopped
1-2 shakes red pepper flakes
1 tsp oregano
1 tsp chopped parsley
1/2 tsp salt
1 C pineapple pieces
pineapple juice from the can
1/4 C pine nuts, roughly chopped
1/4 C vinegar
1 can beer
1 med. green pepper, thinly sliced
1 1/2 T cornstarch
1 T C brown sugar
1/2 C water
Flour, salt, and pepper
Recipe
cut rabbit into serving pieces. Roll in mixture of flour, salt, and pepper. Heat oil in a heavy pan; brown rabbit pieces on all sides over moderate heat. Add garlic, onion, pepper flakes, oregano, parsley, salt, pineapple juice, vinegar, and nuts. Cover pan; cook over low heat 40 minutes or until meat is tender.
Add beer,pineapple and green pepper; cook a few minutes longer. Mix cornstarch and sugar and stir into water. Stir this mixture gradually into liquid in pan and cook slowly about 5 minutes to thicken.
