Serves 6.
I normally use just the breasts of the birds since they are small. You can use the rest of the bird for making stock or stew if you want to go to the trouble of skinning them.
List of Ingredients
6 doves, or 12 breasts (or pigeon)
salt pork
3 C boiling water
1/4 tsp peppercorns
1 small onion sliced
1 small carrot, sliced
2 sprigs parsley
2 stalks celery, chopped
3 T flour
3 T melted fat
1 recipe flaky pie crust
Recipe
render out some fat from the salt pork, saute the birds until browned. Place in a pot and add water, peppercorns, and the vegetables. Simmer until tender, (this could take up to 3 hours). Remove the breasts and strain the stock. Blend flour and fat and use to thicken the stock. Return pigeons to the stock and pour into a casserole dish. Cover with a baked pastry top and serve.
