1 wild goose
apples, sliced
salt

Clean, stuff with apples, season and truss the goose.
Roast in very hot oven 20 minutes to 1 hour for rare. The bird must not be cooked dry.

Those who do not like their bird rare. When goose is half cooked, carve, but do not cut through skin, so the pieces hang together. Lay a plate over and press hard (to get blood out). Put in a casserole, add liquid extracted and 2-3 tablespoons from pan, cover and cook slowly over fire for 10 minutes, or longer for well done.
