Rabbit Jerky

Recipe Introduction
I used a little chief smoker, You will have to compensate for your particular type of smoker.
List of Ingredients
1 whole rabbit
1/2 C vinegar
juice of 1 lime + water to make 1/2 C
2 cloves garlic, pressed
2 tsp Bufalo chipotle sauce
1 tblsp oregano
1/4 tsp black pepper
1 tblsp salt
1 shake of red pepper flakes
Recipe
Debone the rabbit, being careful not not disturb too much meat. Lay the meat out flat. Cut the rib meat in 1/2 inch strips. Cut the leg meat in 1/4 by 1/2 inch thick strips. Cut strips to length desired. Make a marinade of the remaining ingredients and marinate rabbit overnight. Smoke one and one half to two days with mesquite smoke.
Variation;
Teriyaki Marinade.
1 C shoyu, (Japanese dark soy sauce)
2 T sugar
1 medium onion, chopped fine
2 cloves garlic, pressed
1 piece ginger root, (one inch), grated
1 T dry mustard powder
2 T oil
1/2 C seasoned rice vinegar
Combine and use as above recipe.
