    Recipe Introduction


    Squirrel is medium red in color and pleasant tasting. Only the oldest, toughest animals require parboiling for tenderness.

    List of Ingredients




    1 squirrel
    3 T flour
    1/2 T minced parsley
    1 tsp salt
    1/8 tsp pepper
    1/2 C fresh cut mushrooms
    2 C stock or milk

    Biscuits;
    2 C flour
    4 tsp baking powder
    1/2 tsp salt
    1/4 C fat
    2/3 C milk

    Recipe



    Disjoint and cut squirrel into 2-3 pieces.
    Cover with water and cook 1 hour.
    Remove meat from bones in large pieces
    Add 3 tablespoon of flour, parsley, salt, pepper and mushrooms to the stock. Cook until it thickens, about 5 to 10 minutes.
    Add the meat and mix. Pour into a baking dish.

    Make biscuits.
    Sift dry ingredients together. Cut in the fat and add the milk. Stir to moisten dry ingredients. Roll out to fit top of pan.
    Bake at 350 degrees. 30-40 minutes, or until golden brown.

    Serves 6-8.
