Venison steaks or chops, Green Mountain

Cut steaks or chops 1-1/2 inches thick. Preheat broiler for 10 minutes, Place meat in broiler far enough from heat source that surface will be browned in 1/2 the total cooking period, broil until browned, season with salt and pepper, turn and broil other side until done. 10 minutes for rare 1 1/2 inch thick steak, to 30 minutes for well done.
Serve with a sauce made by creaming 4 T melted butter, 1/2 tsp salt, 1/8 tsp pepper, finely chopped parsley and 1 tsp lemon juice. (or 3 T madeira may be added)
