    Chocolate Bundt Cake

    List of Ingredients


    • 1/2 C cocoa
    • 3/4 C boiling water
    • 1 3/4 C barley flour
    • 1 3/4 C sugar
    • 1 tsp baking soda
    • 1 tsp salt
    • 1/2 C oil
    • 7 large eggs, separated
    • 2 tsp vanilla
    • 1/2 tsp cream of tartar


    Instructions


    1. Generously grease a bundt pan and flour it. Stir cacao into boiling water until smooth. Cool completely.

    2. In a large bowl, combine dry ingredients, except cream of tartar. Make a well in dry ingredients and add, in order, oil, egg yolks, cocoa, mixture and vanilla. Beat with spoon until smooth.

    3. Beat egg whites and cream of tartar until stiff. Fold one quarter into the batter, to lighten it. Then fold in the rest. pour it into the bundt pan. Bake on low rack of oven for 60-65 minutes. Let cool 20 minutes before inverting. Cool completely.



    Final Comments


    ICING;
    2 C powdered sugar, 1/4 C cocoa, 1/2 tsp vanilla, 3 T milk. Stir together, using only as much milk as will make a thick, pourable glaze. Let dry a few minutes before cutting with a serrated knife.
