Greek style barley salad

Recipe Introduction
Use vegetable stock, bouillon usually contains MSG, which contains wheat.
List of Ingredients
- 1 3/4 C vegetable stock
- pinch salt
- 1 C raw barley
- 1 clove garlic, chopped
- 2 C baby spinach
- 1 T frseh oregano, or 1 tsp dried
- 1 T lemon juice
- 1 tsp lemon zest
- 1/2 tsp salt
- 2 T olive oil
- 1 medium cucumber, chopped
- 1 large tomato, diced
- 1/2 of a large bell pepper, chopped
- 4 oz feta cheese
Instructions
- Bring stock to a boil with salt. Add barley and return to a boil, covered. Simmer 30 minutes or until stock is absorbed. Chill.
- Chop garlic in food processor with spinach and oregano. Add lemon juice, zest and salt, process again. Add olive oil with machine running. Add to barley. Mix in the vegetables and half of the feta.
- Garnish with rest of feta.
