Hominy and cheese casserole

Slowly cook 2 cups of hominy in chicken stock, until tender but still slightly chewy, ( about 6 hours)
Saute 1/2 cup diced onions and 1/2 cup diced celery in one tablespoon butter, until tender.
Add onions, celery and one cup of grated gorganzola cheese to hominy.
Bake for 15-20 minutes at 350 degrees F.
