Polenta with Sage Butter, Mascarpone

Recipe Introduction
Polenta is the Italian version of cornmeal mush, a staple in many households around the world. This common dish is elevated by the inclusion of a fresh herb butter and the creamy Italian fresh cheese, mascarpone.
List of Ingredients
1 cup polenta or cornmeal (finely or coarsely ground)
1/2 teaspoon salt
4 cups cold water
2 tablespoons butter, softened
1 tablespoon finely chopped fresh sage
1/4 cup mascarpone cheese
1/4 cup grated Parmigiano-Reggiano cheese
Recipe
1. Slowly whisk polenta and salt into water in medium saucepan. Gradually bring to a boil over medium heat, whisking occasionally. When polenta comes to a boil, reduce heat to low; cook 30 to 40 minutes or until thickened and creamy, stirring frequently.
2. Combine butter and sage; whisk into polenta, along with cheeses.
