List of Ingredients
2 C cooked white rice
3 T bacon grease or oil
1 medium onion, chopped
2 C fresh bean sprouts
1 bunch scallion, sliced 1/8 inch
3 eggs scrambled
2-3 carrots, sliced into small pieces
2-3 celery stalks, diced
1 C diced ham, chicken or shrimp

In small amounts of bacon grease, saute onion, carrot and celery. Set aside. Cook beaten egg and set aside. Fry meat in bacon grease to heat and set aside. Add remaining bacon grease (more if needed) and heat to hot. Fry rice for 3 minutes, stirring. Add vegetables and meat. Fold in bean sprouts and cook until slightly limp. Add cooked egg and mix together. Mix in scallion. Season with soy sauce.
