Barley-Stir Fry

List of Ingredients
- 1/2 C Bob's Red Mill pearl barley
- 6 C water
- salt to taste
- 1 T olive oil
- 1 large shallot or onion, miced
- 1/2 tsp crushed, dried hot peppers
- 2 tsp unsalted butter
- 2 tsp chopped , fresh Basil, or 1/2 tsp dried
- 1/2 tsp tomato paste
- pinch beef bouillon powder
- freshly ground black pepper to taste
Instructions
- Bring the 6 cups water to a boil in a medium-size saucepan. Add salt to taste and the barley, simmer, uncovered, until tender, about 1 hour. Drain and set aside. Heat olive oil in a large skillet over medium heat. Add the shallot, or onion and dried hot peppers. Cook 2 minutes, stir in butter and the barley. Cook , tossing constantly, until warmed through. Stir in the basil, tomato paste and bouillon powder. Cook 1 minute. Season with salt and pepper to taste.
