List of Ingredients
1/4 C olive oil
1 large onion, chopped
1 clove garlic, mashed
1-5 pound roasting chicken cut in serving portions
1 1/2 T salt
1/2 teaspoon pepper
1 teaspoon paprika
2 bay leaves
1/2 teaspoon dried oregano
1/8 teaspoon ground turmeric
6 C chicken broth
1/4 tsp saffron
2 C raw rice
3 pimientos peppers, chopped
1 C fresh peas
Recipe
Heat oil in large kettle, add onion and garlic and cook until golden brown. Add chicken, and spices, except saffron. Cook 1/2 hour, turning occasionally. Add hot broth that saffron has been added to. Cover and simmer 1 1/4 hours. Add rice, simmer 1/2 hour, stirring about every 10 minutes. Add pimiento and cook 15 minutes. Add peas and let rest 10 minutes to cool. Serve.
