    List of Ingredients


    • 5 C. whole milk
    • 1/2 vanilla bean
    • 1 cinnamon stick
    • 1/2 C. short grain white rice (valencia or bomba)
    • 2 T butter
    • 1/2 C. sugar
    • 1/2 tsp fresh nutmeg


    Instructions


    1. heat the milk, vanilla bean and cinnamon to a boil. cover, remove from heat and steep for half an hour. remove cinnamon and vanilla.

    2. Return milk to a boil, add rice, reduce to low and cook forty minutes.when rice is tender and thickened but still a bit soupy, remove from heat.

    3. Add butter a little at a time, melting each addition into rice. Add sugar and nutmeg. Cool for one half hour. serve warm, or chill and serve.

    4. you can also add whipped cream if desired. you can also add fruit if desired and wine.
