    Serves 6

    List of Ingredients




    6 eggs
    1/4 C olive oil
    1 onion, sliced
    2 T flour
    2 C tomato puree
    1/4 tsp allspice
    1/2 bell pepper (opt)

    Butter custard cups. set aside.
    Make sauce. fry the onions in the oil,Remove the onions if desired for another use, if using the onions in the sauce, chop them. add flour and stir to incorporate. Add the bell peppers if using and cook 1-3 minutes. Add tomato puree and allspice. Cook to thicken.
    Break an egg into each cup and add 2 tablespoons of the sauce. Set cups in a pan of hot water and bake at 350 degrees F. until whites are set.
