CREMA DI SEDANO (cream of celery soup)

- one large celery
- juice of one lemon
- salt
- pepper,freshley ground
- one tablespoon butter
- one tablespoon white wine
- one tablespoon parsley
- one clove of garlic, finely chopped
- one cup vegetable stock
Instructions
- Clean celery. Remove tough outer stalks and stringy fiber. Chop coarsley and soak in a bowl of water with the lemon juice for ten minutes
- Drain well
- transfer to a pot and add butter, wine, parsley, garlic,salt and pepper. Cook until the wine evaporates.
- Add the stock and simmer for ten to fifteen minutes more.
- Puree in a food mill. Reheat.
