    You can use a variety of beans for this recipe to vary it a bit. Mexican beans of choice would be Flor de maya, Mayacoba, pink, or small red beans.
    Serves 6.

    List of Ingredients




    2 C dried Mayacoba beans (also called canario or peruano)
    1 large onion, sliced
    salt
    pepper
    1 T chili powder
    3 slices bacon, finely diced
    1 clove garlic, minced

    Sauce;
    2 C cooked tomatoes
    2 onions, chopped
    1 tsp chili powder
    1/4 tsp salt

    Recipe



    Sort and Wash beans. Cover with water overnight. Drain and cover with boiling water. Add onion. Cook until tender.
    Drain and chop beans fine, (I save the liquid for soups). Add salt, pepper and chili powder.
    Brown bacon in skillet, add garlic and when brown remove. Add the beans and cook to an almost dry texture. Remove to platter and Cook the sauce ingredients in the skillet. Reduce to half. Force through a sieve (puree), adjust seasonings and reheat beans and sauce. Pour the sauce over the beans to serve.
