Ensalada de Garbanzos-(garbanzo salad)

Servings: 8 servings
List of Ingredients
2-15 oz. cans garbanzo beans, drained and rinsed
1 medium red bell pepper, diced
2 large carrots, diced
1 medium sweet onion (such as Vidalia), diced
3 ribs celery, diced
12 oz. pkg. V&V SUPREMO® QUESO FRESCO cheese, diced
1/2 bunch cilantro, chopped
For the Dressing
1/2 cup V&V SUPREMO® CREMA CHIHUAHUA® sour cream
3 tbsp. fresh lime juice
1 tsp. salt
Recipe
1. Combine salad ingredients in a large bowl.
2. In small bowl, whisk together lime and salt until salt is dissolved. Whisk in sour cream.
3. Pour dressing over salad and mix well.
(Note: This dressing can be adjusted with more sour cream for other salad applications, according to taste.)
Note;
You can use 3 scallions in place of onion.
1/4 C chopped pimiento pepper in place of bell pepper.
I like to add 1 T chopped parsley.
2 T wine vinegar.
And place lettuce leaves on plate and top with sliced tomatoes, top with the salad and add a few black olives, and some hard boiled eggs, quartered for garnish.
You can use a vinaigrette for dressing if desired.
