1/2 pound pink beans
1 1/2 quarts water
1 C chopped yellow onion
1/2 C beef jerky, pounded fine
2 pounds beef shin
2 T hot peppers
Soak beans overnight, then add all else. Simmer for 3-6 hours or until beans are tender.
Use red beans, (or any beans desired). 1 C to 3 C water and add 1/2 C bacon drippings or 1/2 C salt pork, diced. A clove of garlic, 1 tsp brown sugar and a pinch of mexican oregano.
Pinto beans will require 1 1/2 qts water to 1 C beans.
Serve as beans, or, these recipes also work well for frijoles refritos.
