3 pounds meaty pork bones
3 T lard
1 medium yellow onion, chopped
1 C red chili sauce
2 eggs
1 qt cooked beans
1/2 C grated Chihuahua cheese (med cheddar)
4 T bread crumbsRecipe
Boil the pork until meat falls from bones. Strain the liquid off and reserve, Skim the broth and boil down to 1 cup. Let meat dry.
Fry the meat in the lard with the onions. Add the chili sauce.
Whip the eggs lightly and stir into the cold beans. Add the cheese and bread crumbs. Stir together with the neat mixture.
Grease a baking pan and add the bean mixture. Pour the broth mixture over and bake at 350 degrees F. for 1 hour.
