    4 scallions
    1 small lump lambs fat
    1 lamb shank
    1/2 pound chick peas
    1 tsp saffron

    Recipe



    Soak the beans, (or use 15oz canned).
    Chop the onions fine and place with the fat in a heavy pot. Brown the shank in this.
    Add chick peas and enough water to cover. Simmer, till tender. Watch the beans, you may need to add water.
    Season to taste with salt and pepper and add the saffron. Cook a few minutes.
