    Makes 1 dozen.
    There is less skill required in making these over other tortillas. Makes them ideal for camping or hunting. Make the dough in advance and place in a plastic bag. Toss it in the cooler until ready to use.

    List of Ingredients




    15 ounces cooked hominy
    1 T cornmeal
    2 t cold water
    salt to taste

    Recipe



    drain hominy, (you can use canned) and put through fine food chopper twice. (or food processor, leaving it the same texture as cooked polenta). Add corn meal and water,(not too much, depending on how wet the hominy is). Roll the dough with hands into small biscuits about 1 1/2 inches in diameter and 1/2 inch thick. Cover a breadboard, or cutting board with a moist towel. Place biscuits on top and cover with another moist towel. Place a second board on top and exert enough even pressure to make dough wafer thin and round with smooth edges. Care fully remove from napkins place on hot, lightly greased griddle. After 2-3 minutes turn with pancake turner. When slightly browned, serve with lots of sausages and eggs for breakfast. Can be served with beans and cheese for other meals. (or whatever sounds good to you).
