    Mexican Green Rice

    Recipe Introduction

    There are countless variations to this recipe. Try using different rices, chilis or peppers. Tomatoes, broccoli, parsley or not. Cumin is a nice additive. Serves 4-6 as a side dish.

    List of Ingredients

    1 medium onion, finely chopped
    4 cloves of garlic, minced
    oil
    1-2 poblano chilies chopped, or jalapenos, or canned green chilies (or not)
    1/2 cup of fresh cilantro, or parsley (or both)
    2 cups of stock
    1 cup rice (wild rice not recommended)
    1/2 tsp Salt
    1 chopped tomato, (opt)

    Recipe

    saute onion and garlic in oil (1 T). Add rice and stir until grains are yellow and coated. Add broth, chilies and salt. Cover and simmer 20-25 minutes. Fluff with a fork. add tomato if using, and cilantro, and, or parsley. fluff with a fork.
