List of Ingredients
8- 12 dove breasts
1/4 C olive oil
1 C long grain brown rice
1 Spanish onion
1 clove garlic (fresh)
2 C chicken broth, heat 1/4 C and dissolve saffron in it
1/4 C dry sherry
1 tsp saffron
2 T chopped parsley
Flour
salt
pepper
Recipe
In a large cast iron skillet heat 2-3 tablespoon olive oil. Brown the dove breasts on all sides after lightly dredging in flour mixed with salt and pepper. In the same skillet, saute the onions and garlic until somewhat brown. Add 1 cup rice to onions and garlic. Add broth and sherry. Add the seasonings. Place the doves breasts back in the liquid, reduce the heat to a simmer, cover and cook approximately 45 minutes. Add more liquid if necessary. The doves should almost be covered by the rice and liquid at beginning. Drizzle rest of olive oil over and cook 10 minutes. When the rice is done, the breasts should be tender.
