1 T vegetable oil shopping list
10 oz Mexican pork chorizo, casings removed
1 small onion, diced
1 lb small potatoes, diced and boiled
1 Cup Shredded Panela Cheese, or mozzarella
1/4 Cup Cotija Cheese, or parmesan
salt

Recipe
Heat the oil in a heavy large skillet over medium-high heat. Add the chorizo and cook, breaking up until dry and crisp, about 10 minutes.
Remove the chorizo from pan.
Pour off all but 1 tablespoon of fat from the pan and heat the pan over medium-high heat. Add the onions and boiled potatoes and saute until brown, about 12 minutes.
Add the cooked chorizo and salt and pepper, to taste.
Add Panela cheese and mix well. Remove from heat and sprinkle with cotija cheese.
