    Pozole, Pork

    List of Ingredients


    • 4 ounce can Ancho chili sauce or smooth red chili sauce
    • 1 1/8 pounds diced lean pork meat
    • 1/2 of a pigs foot , cut in 3 pieces
    • 3 C Teasdale white hominy, drained
    • 1/2 head of chopped cabbage
    • 3/4 tsp cayenne pepper
    • 2 lemons, juiced
    • 1/2 onion, chopped
    • water
    • salt to taste


    Instructions


    1. Place the meat and pigs foot in a soup pot and add just enough water to cover and salt to taste. cover and bring to a boil. cook until tender, add the hominy, simmer until it pops.

    2. Add chili sauce and enough water to a soupy consistency, boil 30 minutes more. Add onion, cayenne pepper, cabbage and lemon juice to taste.
