Meats
small piece of salt pork
1/2 pound lamb or mutton
1/2 pound pork Butt
1/2 pound chicken thighs
Vegetables
1 bunch of quelites or (wild spinach)
4 oz mushrooms
2 big onions
2 cloves of garlic, chopped
seasoning
1/2 C flour
1/4 tsp cinnamon
1/4 tsp.allspice
1/4 tsp. cloves
large pinch nutmeg
pinch fennel
1/4 tsp ginger
11/4 C dry sherry
1/4 C dry red wine
additional;
a single pie crust
1 tortilla
deep dish pie plate
Cube the meats, bite size
prepare greens, garlic and onions. Slice mushrooms.
Place flour and all ground dry seasonings in bag and dredge the meat.
Layer the meats and vegetables in the pastry, in the pie tin, or dutch oven without lid.
Pour the sherry and red wine over.
cover the pie plate with the tortilla and seal the dough with a little red wine . Prick or slit the tortilla to make steam vents. Place over a charcoal fire or in the oven at 350 degrees F. for 3 hours.
