Queso fundido-(fondue)

List of Ingredients
1 T grated onion
4 oz chopped anaheim chilis (or a little jalapeno for heat)
1/2 C tequila
2 T butter
2 T flour
2 C milk
10 oz chihuahua cheese (or mild cheddar)
10 ounces queso criollo (or Muenster)
1 tomato, chopped
Recipe
saute the onion and chilies in oil until limp, add the tequila and tomato and cook until the alcohol is reduced by half. Add the butter and cook until foamy. Add the flour and blend well, stir until light colored and puffed. Stir in milk and stir until it begins to thicken. Add the grated cheese and cook and stir until thickened.
Serve plain soft tortillas, or fried tortillas seasoned with garlic salt and paprika to dip into the fondue, or quesadillas cut in small wedges. Each person make his own.
serve refried beans on the side, to top the tortillas with. Other toppings can include salsa, cilantro, avocado cubes, sour cream, lettuce etc....
Also you can add 5 oz fried chorizo to the fondue sauce.
