Salsa por Huevos en Torta-(omelet sauce)

this makes enough to fill a 6 egg omelt.
List of Ingredients
6 medium tomatoes
2 T olive oil
2 medium onions, coarsely chopped
2 T green chilies, minced
1 clove garlic, pressed
1/2 tsp cilantro
1/2 tsp oregano
pinch powdered ginger
Recipe
Blanch, peel and seed the tomatoes. Push them through a sieve, or puree. Simmer in the oil which the onions were sauteed in. Add green chilies and cook for ten minutes. Add garlic and seasonings, stir well. Cook a few more minutes.
Make a 6 egg omelet and just before folding add the above sauce to half the omelet.
You can also add cheese and sour cream if desired to the top of the folded omelet.
