    List of Ingredients


    • 1 pound of scallops in 1/2 inch dice
    • 2 plums in 1/2 inch dice
    • 1-2 tsp fresh chopped tarragon
    • 1/4 C lime juice
    • 1/2 tsp grated lime zest`salt to taste
    • pinch cayenne pepper


    Instructions


    1. Toss all together and season with salt and cayenne. Let sit 15 minutes at room temperature.


    Final Comments


    Prickly pear in place of plums if desired.
