Scallop and plum ceviche

List of Ingredients
- 1 pound of scallops in 1/2 inch dice
- 2 plums in 1/2 inch dice
- 1-2 tsp fresh chopped tarragon
- 1/4 C lime juice
- 1/2 tsp grated lime zest`salt to taste
- pinch cayenne pepper
Instructions
- Toss all together and season with salt and cayenne. Let sit 15 minutes at room temperature.
Final Comments
Prickly pear in place of plums if desired.
