    Recipe Introduction

    Usually served during lent. Serves 6-8.

    List of Ingredients

    6 T olive oil
    12 slices dense, crusty bread
    Pine nuts (pinon)
    white sugar
    1/8 pound cheese
    1 1/2 C brown sugar
    2 C hot water
    1/4 tsp cinnamon

    Recipe

    Heat oil in a skillet. Toast bread and dip each slice into hot oil. Place a layer of bread in casserole, then a layer of whole pine nuts, slivers of cheese and a sprinkling of white sugar. Alternate the layers ending with bread. Have at least 2 inches at top of casserole as this dish swells as it cooks. Combine brown sugar, hot water and cinnamon and cook until sugar is dissolved. Pour a cup of the sauce into casserole and bake at 350 degrees F. for 1/2 an hour, basting frequently with more sauce.

    Var: use 1 C raisins plumped in the 2 cups of water. Also pecans can be substituted for pine nuts if desired.
