if you cant find cotija cheese, use feta.
List of Ingredients
- 1 1/2 C Masa harina
- Scant 1 C warm water
- 1 T oil
- 1 pound refried beans
- 8 oz Chorizo sausage
- 1 C salsa verde
- 1/2 C chopped onion
- 1/4 C chopped fresh cilantro
- 1/4 C crumbled cotija cheese
Instructions
- To make the sopes cakes: Place the masa harina in a bowl and add all but one quarter of the warm water. See how much more it will absorb, add more as needed for a soft pliable dough.
- Work with dampened hands until smooth. cover with a dampened cloth for one hour.
- Divide into twelve balls of one and one quarter inches each. Roll out to three and one half inch cakes about one quarter inch thick.Cook in oil until opaque and speckled.
- Push down in the center of each to form an indentation with a small outside lip.
- Heat the beans in a saucepan until warm, stirring occasionally.
- Cook chorizo in skillet, over medium heat and cook five minutes, or until well done, stirring occasionally. Drain if necessary.
- Divide beans equally between each sope to cover. Top each with about 1 tablespoon chorizo. Drizzle with salsa verde, top with onion, cilantro and cheese.
