Serves 6.
List of Ingredients
3 T fat
1 small onion, sliced
2 T chopped green pepper
1 T chopped pimiento
1/2 C chopped mushrooms
1/2 clove garlic
1 tsp salt
2 C cooked tomatoes
1/8 tsp pepper
6 slices calves liver
flour
1/4 C olive oil
Recipe
Melt fat, add onion and green pepper and cook for 10 minutes. Add remaining ingredients, except the last 3 and cook over low heat for 1 hour. Dip liver in flour and saute in olive oil until browned on both sides. Season with salt and pepper. Serve with the hot sauce over it. Garnish with parsley.
