serves 4 as a salad.
Dice a tomato, and a cucumber. Chop up 3 tablspoons bell pepper and a couple of tablespoons scallions. Combine 1/2 C french dressing with a little oregano and black pepper and 2 T chopped, hard boiled egg white. Cut a couple of avocados in half and serve on lettuce with the above ingredients piled on top.
Sometimes he likes to just cut the avocados in half and fill with Thousand Island dressing.
