    2 pounds of baby potatoes
    1 C coarse kosher or sea salt, plus more as needed

    Recipe



    Make the brine of water and the salt, to just float the potatoes. Add more salt if necessary.
    Bring to a boil over high heat, then reduce to a simmer and cook 25-30 minutes, or until just tender.
    pour out all but enough water to cover bottom of the pot. Return to the stove on low heat and shake the pot until the salt begins to crystallize, about five minutes.
    Remove from stove and cover with a dish towel ten minutes, or until the skins have wrinkled.
    Serve with mojo rojo and/or mojo de cilantro.
