    (incomplete) Crumbs
    Bread, White: 1 slice = ½ cup soft crumbs; ¼ cup fine dry crumbs
    Chocolate or vanilla wafers: 20 to 22 cookies = about 1 cup crumbs
    Graham crackers: 7 squares = ½ cup finely crushed crumbs

    Meats
    Ground beef (raw): 2 C tightly packed equals 1 pound, or 1 pound = 2 ¾ cups, cooked and crumbled
    Ground meat, 3 C loosely packed equals 3 cups
    Ham (diced): 1 pound = 3 cups
    Ham (ground): 1 pound = 2 cups

    Chicken (boneless breasts): ¾ pound = 2 cups cooked and cubed
    Chicken (whole): 3 ½ pounds = 3 cups cooked and cubed

    DAIRY;

    MILK;

    Sweet milk, 1 C equals 1 C sour milk + 1 tsp baking soda
    Sour milk

    Cream, 1 cup = 2-21/2 cups whipped
    Butter: 1 pound = 2 cups

    Cheese (shredded): 4 ounces = 1 cup
    Cheese, 1 pound grated=4-5 cups
    Cheese (cottage): 1 pound = 2 cups

    Eggs

    Whites: 1 cup = 8 large; 10 to 11 medium; 11 to 12 small
    Whole: 1 cup = 5 large; 6 medium; 7 small
    Yolks: 1 cup = 12 large; 13 to 14 medium; 15 to 16 small
    a large egg weighs 1.7 oz and are scaled in commercial baking.

    Vegetable

    FRUIT;

    Apples dried, 1 pound =5 C

    Candied fruit peel, 1 pound = 3 C

    Dates, 1 pound = 2 C

    Raisins, 2 ½ C equals 1 pound

    Fruit juice;


    Juice, 1 lemon = 2-3 tablespoons
    Orange, 1 medium orange = ½ C juice

    NUTS;

    Almonds, 1 pound shelled = about 3 C

    Brazil nuts, 1 pound shelled = 3 C

    Pecans, 1 pound shelled = about 3 C

    Walnuts, 1 pound shelled = about 4 C

    chopped nuts, 1 C=1/4 pound, or 3 C coarsely chopped =1 pound

    Beans

    Beans (dried): 1 pound = 2 cups uncooked, or 6 cups cooked
    beans, baby limas=2 cups or 5-6 cups cooked
    Beans (canned): 15-ounce can = 1 2/3 cups drained

    Pasta: 1 cup, raw = 2 cups cooked, or 8-9 oz package equals 4-5 C cooked

    Rice, 1 cup, (7 oz + 200 grams) = 3-4 cups cooked, or

    Sugar

    Brown sugar, 1 pound = 2 ¼ C
    Confectioners, 1 pound= 3 ½ C
    Granulated white, I pound=2 C
    Powdered, 1 pound= 2 1/3 C or 4 ½ oz or 125 grams

    Flour

    Flour, measure using the spoon and level method. Spoon flour into measuring cup and brush off excess with a spatula or knife. equals 4.25 ounces, or use a scale. 1 pound=4 C or .453 grams (sifted)
    2 T flour equals 1 T cornstarch for thickening
    Cake flour, 1 pound=4 1/2 C, 1 3/4C all purpose flour equals 2 C cake flour (approximate)
    Coconut flour, 4 C=4 1/2 oz or 125 grams
    Rice flour, 1 C =7 oz or 200 grams

    Spices;

    BAKING;

    Shortening, 2 T = 1 oz

    Liquids are in fluid ounces with the exception of commercial bread making where they are input by weight.


    Misc.

    Chocolate, 1 oz (1 square) equals 3 T cocoa plus 1 T shortening [fat]
    Cocoa, 3 ½ oz or 100 grams

    Honey, SUB: 2/3 C equals 1 C sugar +1/3 C water
    Syrup, 10 ½ oz or 300grams
    Corn syrup, 1 ½ C corn syrup, SUB: 1 C sugar + ½ C water
