Antipasto (or appetizer)
Salad, soups, thin meats, fruit and vegetables can fall under this category. Keep things simple. Strive for two or three items, then choose a few fresh, seasonal fruits and vegetables and you’re good.
Suggested ideas;
use
1/3 raw vegetables
1/3 pickled vegetables
1/3 cold, cooked vegetables
Sprinkle with oil,vinegar and herb dressing if desired.
Garnish with choice of olives and cheese.
