    1 medium onion
    1 carrot
    3/4 tsp salt
    1/2 tsp freshly ground black pepper
    2 beef bouillon cubes, in 1/2 C water
    1 C dry white wine
    2 egg yolks
    3 tsp lemon juice
    1 celery stalk with leaves
    1/2 tsp thyme
    2 bay leaves

    Make the battuto, finely mince the ingredients. Saute in olive oil until golden.
