    2 loaves.-preheat oven to 350 degrees F.

    List of Ingredients




    4 1/2 tsp dry yeast
    2 C tepid water
    2 T honey
    2 C barley flour
    2 C whole wheat flour
    2 C unbleached white flour
    2 T olive oil
    2 tsp salt

    Recipe



    Dissolve yeast in warm water. Stir in the honey and wait 5 minutes until the yeast is foamy.
    Blend the the flours together. Add half to the yeast mixture and beat for 10 minutes, to incorporate air into the dough, to a thick consistency.
    Cover with plastic wrap and leave in a warm place for 1 hour, until doubled.
    Punch down dough, carefully fold in the olive oil, salt and half cup flour. Gradually fold in more flour until dough comes away from sides of bowl.
    Knead on lightly floured board . Knead well for 10 minutes. add more flour as needed. Lightly oil a bowl. Cover and let rise again.
    Punch dough down. Shape into two domed rounds on floured surface. Cut a cross in the top of each loaf. Cover with a towel and let rise again.
    Bake at 350 degrees F. for 50 minutes. Cool on wire racks. Bread will be grayish due to barley flour.
